I found a recipe for "Grandma's Rice Dish" from Taste of Home. I made it one time and it reminded me of a frozen meal that I use to eat called Sante Fe-Style Beans and Rice. So I took that recipe and I added my own twist to it, and this is what we got!
Ingredients:
1lb lean ground beef
1/2 cup chopped onion
1/2 cup chopped green onion
2 cups cooked brown rice
1 can diced tomatoes,undrained
1 can whole kernel corn,drained
1 can black beans, drained and rinsed
6 bacon strips(I use turkey bacon but regular bacon is great too)
2 tsp chili powder
1 tsp garlic powder
1/2 tsp salt
1 1/2 cups shredded cheddar cheese,divided
1/2 cup dry bread crumbs
1 Tbsp butter, melted
- In a large skillet, cook the beef,onion and green pepper over medium heat until meat is no longer pink;drain. Stir in the rice,tomatoes,beans,corn,bacon,chili powder,garlic powder and salt. Bring to a boil;remove from the heat. Add 1 cup of cheese and stir until melted.
