Avonlea

Save by the Bell, Full House, Family Matters, Boy Meets Girl etc... everyone has shows that they remember from the 90s. But one show that sticks out to me is Avonlea. Avonlea came on the Disney channel and it ran from 1990-1996.
Wikipedia says:  Road to Avonlea
The series is set in the fictional small town of Avonlea, Prince Edward Island, in the early 20th century (1903–1912). There, 11-year-old Montreal heiress Sara Stanley is sent by her wealthy father to live with her two maiden aunts, Hetty and Olivia King, to be near her late mother's side of the family. The show's focus shifted over the years from Sara's interactions with her new-found relatives, to stories about the King family. Later seasons of the show focused more on residents of Avonlea who were connected to the King family.

Ok so I have told you all of that to tell you this...It is my moms FAVORITE show! It was ALWAYS on when I was a kid because she would record them on VHS when they were on.(Remember back when you set your VCR to record a show? Instead of setting your DVR? Wow I'm getting old...)  Anyway, my mom has been talking for years about buying these, and never did. So this year for her birthday we all chipped in and we bought every season on DVD for her!

We also got her the Christmas Special.

This is a great wholesome family show. I have no problem letting my 6 year old watch this show. Although it takes her a while to get in to it b/c she says it looks "old".  It brings back a lot of memories for me. And though not all would admit it I think everyone in my family loves it!  Between Aunt Hetty the "boss" of the family and school marm. To Sarah,Felix, and Felicity and their adventures. Peg Bowan the town witch. Captain Crane the keeper of the light house to Jasper Dale the inventor to Rachel Lynde the load busy body. You will find someone you like in this show and some lessons your kids can learn from!

Menu 4-4/4-10

Today is YaYas birthday!! YaYa for those that do not know is what my kids call my mom! We had a great day and a small lunch cook out.We got her the BEST birthday present....I am doing a post on this later!

Not a lot going on this week. Big Daddy has been wanting some Pizza Hut so I worked that in. Also Sissy has an appointment on Friday,she will miss school. So we will have breakfast and lunch at home that day.

Pioneer Woman - Chicken Spaghetti


I love this Chicken Spaghetti it is definitely in my top 5 favorite recipes! Everyone that has tryed this loves it...always!  And it makes a great freezer dish. I recently made some of these for my freezer and for a friend that is going to have a baby.
I did not do step by step pictures for this because it was the day I did all of my freezer cooking.

Ingredients:
  • 2 cups cooked chicken, diced
  • 3 cups dry spaghetti, broken into 2 inch pieces
  • 2 cans cream of Mushroom Soup (or 1 cream of mushroom and 1 cream of chicken)
  • 2 cups grated Sharp Cheddar Cheese
  • 1/4 cup finely diced green pepper
  • 1/4 cup finely diced onion
  • 1 jar (4oz) diced pimentos, drained
  • 2 cups reserved chicken broth from pot
  • 1 tsp Lawry's seasoned salt
  • 1/8-1/4 tsp Cayenne pepper
  • Salt and Pepper, to taste
  • 1 cup additional grated Sharp Cheddar Cheese
  1. Boil 1 whole (or cut up fryer). SAVE THE BROTH. Save out 2 cups broth.  De-bone the chicken.(You will only need 2 cups so pull the rest and freeze it for another dish)
  2. Cook spaghetti in chicken broth until al dente. Do not overcook.
  3. When Spaghetti is cooked combine with remaining ingredients except additional cheese.


      4. Place mixture in casserole pan and top with cheese.
      5. Bake for 45 minutes @ 350 degrees.

The trick to this dish is to keep everything diced very small.

*** Also this dish is really good with Ruffles new Molten Hot Wings chips crunched over top....don't ask me how I know.......     :-)

Menu 3-28/4-3



I am skipping breakfast this week because Sissy has not been interested at all and it just turns into a big hassle first thing in the morning! Also every lunch is Bento, so I am just putting the dinners on here through the week. 

Monday:
Garlic Roasted Chicken w/Alexia Frozen Mixed Veggies(Pictured Above)

Tuesday:
Hamburger Steak and Gravy w/Mac and Cheese and Peas

Wednesday:
Pulled Pork w/Corn on Cob and Cole Slaw

Thursday:
Spaghetti w/Green Beans and Toast

Friday:
Turkey Hash

Saturday:
Pancake and Sausage Muffins
Egg Salad Sandwich w/Chips
Crabby Patties  w/Roasted Potatoes and Raw Veggies

Sunday:
Biscuits, Eggs and Bacon
*Cook Out for YaYas Birthday! Hamburgers, Hot Dogs, Bratwurst, Grilled Mixed Veggies, etc...

CRAZY WEEKEND!

Well when it rains it pours...what a weekend! This was definitely one of those weekends were not everything goes as planned! Sissy went to grandparents house after school on Friday and Brother and I were going to have our night together. I had planned to have one of those typical nights with a 15 month old. Eating, playing, watching Cars, bath and bed.  Ya well that's not what happened. Around 5:30 I went in the kitchen to finish up dinner, Brother was playing with his toys and watching TV. Literally 3 minutes later I turned around and he was standing on the arm of the couch. His foot slipped and he fell straight down between the couch and the wall. He screamed and cryed for 10 minutes and I held him. I gave him his passy and blankie and he calmed Down. put him in his high chair and we ate dinner. When we got done eating I got him out of his high chair to go play....he wouldn't walk!! Talk about a scared Momma! We went to the ER and they did xrays etc.. They think that he just sprained or pulled muscle. It's Sunday and he is still limping a little!  :-(    SO Saturday I was all geared up to do some cooking. Went to the grocery store and got everything I needed. Got home started cooking and get a call that Sister has an ear ache and wants to come home. So grandparents bring her home and she justs chills on the couch the rest of the night. Both kids had a bath and were in bed by 8pm.(I had more cooking to do). I cooked until midnight and Big Daddy came home at 2A. I had JUST got in bed and got comfy when I heard it... lets just say that Sissy has the stomach bug!! UGH!!! We were up ALL night!! Now at noon on Sunday she is in my bed sleeping and hasn't got sick in a few hours! But guess what.....now Big Daddy is sick!! I am ready to go crawl back in the bed and pull the covers over my head! Oh but wait I can't because I have a TURKEY in the oven! Am I crazy or what???

Easy Pot Roast


1 1/2 pound chuck roast
3-4 celery stalks
3 carrots
1 large onion
5-6 red potatoes
Lemon juice
Lemon Pepper seasoning
  1. Add lemon juice and Lemon Pepper seasoning to roast and allow to marinate 8-12 hours
  2. Put Roast in base of crock pot
  3. Chop all veggies ( large chunks) and add around roast

       4. Cook on low for 8 hours.

I served this with Brown Gravy and Cornbread. YUM-O We loved it and will continue to use this recipe!

I let Sissy choose her lunch again on Tuesday. I think she did a fairly good job. We are on a fruit and veggie strike again at our house...from BOTH kids.  Arghhh...

She took water to drink

Mushrooms and Onions


This is one of those "to easy for a recipe" recipe. Haha!
I only make this when I make steak and it is a GREAT side!

Here is what you will need:

2 Tbsp Olive Oil
Garlic Powder
Small can Mushrooms (I like onions more than mushrooms, you can switch to have more mushrooms)
1 small onion( I sliver it)

  1. Add oil to skillet and turn on medium high heat.
  2. When oil is hot add onions. Allow onions to cook down some.
  3. Add mushrooms and Garlic Powder.
  4. Cook about 5 minutes or until onions are tender.

Menu Plan 3-21/3-27

I had a GREAT weekend! Went to a birthday party on Saturday at the park. Same as last week after all the pizza and cake we went for a walk around the park! Yay!
Then today Big Daddy took me and the kids to Cades Cove! One of my most favorite places!  :-)  We took a packed lunch for a picnic but, it was windy so we had a "car lunch". We came home to work in the yard and then grilled out!  It was a beautiful day in East TN!


Here is what we will be eating this week:
