I just want to take a minute and THANK ALL of my WONDERFUL cashiers at all the stores I go to.I am truly blessed to have such nice and patient cashiers! 98% of the time I don't have any problems and when I do they are quick to help me figure them out. Lasagna Subs


Here is what you will need:

6 sub rolls
2 cups Spaghetti Sauce with Meat*
1/2 cup sour cream (or ricotta cheese if you prefer)
1 egg white (don't use if you use ricotta)
1 tsp Italian Seasoning
1/2 tsp salt
2 cups Mozzarella cheese, divided
1/4 cup Parmesan cheese



Preheat oven to 350.


Slice off the tops of the sub rolls, thin. Then scoop out the bread from the inside.


Spoon some spaghetti sauce into the rolls.


In a mixing bowl, combine the sour cream, egg white, spices, salt and 1 cup of the mozzarella cheese.  Spoon over the spaghetti sauce.


Sprinkle a little Parmesan cheese and mozzarella cheese over top.


Add the bread top back on.  Place into a foil pouch and bake for 25-30 minutes.


Prepare small, simple side salad.


I originally found this recipe on $5 Dinners  
EVERYONE in my family decided it was a KEEPER. It's so good! Close to a meatball sub, in fact I might add some Italian sausage to it next time!

Y'all try this one out, you will love it! :-)


*Spaghetti Sauce(doubled so you can freeze some for later)

1lb lean ground beef
4 (15oz) cans tomato sauce
1 (6oz) cans tomato paste
2tsp dried basil
1 tsp sugar
1 tsp oregano
1/2 tsp salt
1/2 tsp garlic powder

Brown ground beef, drain
Add everything else and bring to a boil, turn to low heat and let simmer 30-45 minutes.

We have enjoyed our Memorial Day weekend, so far! Cook-Out at Papa and YaYas, then took the kids to the River! Tonight we are grilling out at home with Big Daddy and Papaw! Ready for a SLOW LAZY week!!  :-)

Not a lot going on this week, it's Sissy's first week of Summer break from school so we will start all three meals again! :-)

1. Play outside more with kids
    *Have done this more than I did but would like to get in A LOT more time!

2. Figure out the blogging world
    *I seem to be doing OK with this, I haven't figured everything out but I am learning something EVERY day!


3. Be more crafty with Sissys bento
   * We are going to work on this over the summer

4. Pack Hubbys lunch more often
