Queso Chicken Pasta



Seriously y'all if you are not on Pinterest you are missing out!! This is of course another one of my fabulous finds! It was so YUMMY!! The only thing I would change is the jalapeno. I think there was enough "kick" with just the Ro*Tel, but if you like really spicy then keep it in.

Here is what you will need:

8 ounces penne pasta
2 teaspoons vegetable oil
1 cup diced onion
2 cloves garlic, minced
1 jalapeno, minced
1/2 teaspoon cumin
1/4 teaspoon coriander
1 tablespoon flour
1 1/3 cup milk
1 teaspoon salt
3 tablespoons cream cheese
6 ounces Colby-jack cheese, divided
1/2 cup drained Ro*Tel tomatoes
2 cups cooked shredded chicken

Heat the oven to 350 F and spray a medium casserole dish with non-stick spray.

Cook the pasta according to the package directions, but reduce the cooking time by two minutes.

In a medium pot heat the oil over medium heat. Once it begins to shimmer add the onion, garlic and peppers. Cook until they begin to soften, about three minutes. Add the cumin, coriander and salt and cook for an additional two minutes, or until the spices become fragrant.

Add the flour and cook for three minutes, stirring constantly, until all the flour is moist. Gradually whisk in the milk and stir until smooth. Bring the mixture to a simmer and allow to thicken.

Turn off the heat and add the cream cheese and 4 ounces of the shredded cheese and whisk until melted. Stir in the Ro*Tel tomatoes.

Pour the pasta into the prepared casserole dish, stir in the shredded chicken and sauce. Top with the remaining shredded cheese.

Bake 20 to 30 minutes, or until the pasta is bubbly and the cheese has melted. Let stand five minutes before serving.

We have had a great weekend! 10 mile Yard Sale yesterday,then planted the garden! Today we went to the Flea Market!  Now we are being lazy and resting up to get ready for this new week! :-) Speaking of new week, here is what I have planned...

Steak/Ribs with Twice Baked Potatoes, Corn on Cob,Baked Beans, Mushrooms and Onions

Mexican Egg Bake (Carry-Over) with Fresh Fruit

Veggie Burger, Sweet Potato Fries and Tomato/Onion Salad

Friday:
Muffins,Egg Whites, and Fresh Fruit

Cake Batter Blondies


Have I mentioned my love for Pinterest? These are awesome! If  you are like me and can not resist licking the spoon while making a cake...even though you know you aren't supposed to, then these are for you!! They are so good...in moderation, much like the Toffee Bars they are very sweet.

 Here is what you will need:

1 box yellow cake mix
1/4 cup canola oil
1 egg, beaten
1/4 – 1/2 cup milk
1/4 cup rainbow sprinkles
1/2 cup white chocolate chips

Preheat oven to 350 degrees.
Combine the cake mix and sprinkles in a large bowl, then mix in the oil and egg.
Add the milk slowly just until the batter is combined.
Place better in a greased 8×8 pan or 8-inch cake pan.
Bake for 25-30 minutes or just until the edges turn golden.
Let cool for 20 minutes before cutting because the gooey center needs to set.

Easter Present and New Menu

Had a great Easter with family yesterday! Lots of food, Egg Hunt and...

...teaching!  :o)

We are finding lots of new games, listening to music, watching Hop etc...Sissy is on Spring Break and we have lots planned to do... can't talk much.  :-)

"Fire Crackers"



YAY! Another Pinterest Score! These are called "Fire Crackers" and they live up to their name. But they are Oh so good!

Here is how you make them:

 1 lb. crackers: 1/3 each of Cheese It's, Mini Club & Mini Saltines
 1 1/2 cup canola oil
1 pk Ranch salad dressing mix
 2-3 Tablespoon crushed red peppers

 Mix together oil, Ranch and crushed red peppers.

Pour over crackers in a big airtight container, toss several times over a 1 hr period.

Best if made the day before. Will keep for a extended period of time in a airtight container.

 Do not refrigerate.
