Cashew Chicken
This is what you will need:
- 1 cup Brown Rice
- 3Tbs Soy Sauce
- 2tsp Ginger
- 1tsp sugar
- 1tsp sesame oil (if desired)
- 1lb boneless skinless chicken breasts (I use tenders) cut into bite size pieces
- 3/4cup chicken broth (just ignore the fact that there are 2 cans in picture :)
- 1 1/2tsp cornstarch
- 1Tbs vegetable oil
- 3cups fresh broccoli
- 2 green onions, sliced
- 1cup salted roasted cashews
In a large bowl mix soy sauce ,ginger, sugar and sesame oil. Stir in chicken until coated ;let stand 15 minutes.
In a small bowl, stir 1/4cup of broth and the cornstarch until cornstarch is dissolved; set aside.
Heat Vegetable oil over high heat . Add chicken, reserve any remaining marinade. Cook chicken about 3 minutes or until no longer pink.
Stir in broccoli and remaining 1/2cup broth. Cover and cook 1 minute. Stir in onions and cashews.
Stir reserved marinade into cornstarch mixture. Stir into chicken mixture. Cook 2 minutes or until sauce thickens.
Serve over rice.
