I'm back!

Yay I'm back!  I have my nice new computer (thank you YaYa and Papa) and now I'm REALLY going to try to figure all of this out! And I am starting by posting my first recipe. This recipe is from Pillsbury and my family and I enjoyed it!


Cashew Chicken



This is what you will need:

  • 1 cup Brown Rice
  • 3Tbs Soy Sauce
  • 2tsp Ginger
  • 1tsp sugar
  • 1tsp sesame oil (if desired)
  • 1lb boneless skinless chicken breasts (I use tenders) cut into bite size pieces
  • 3/4cup chicken broth (just ignore the fact that there are 2 cans in picture :)
  • 1 1/2tsp cornstarch
  • 1Tbs vegetable oil
  • 3cups fresh broccoli
  • 2 green onions, sliced
  • 1cup salted roasted cashews
Cook rice as directed on package.

In a large bowl mix soy sauce ,ginger, sugar and sesame oil. Stir in chicken until coated ;let stand 15 minutes.

In a small bowl, stir 1/4cup of broth and the cornstarch until cornstarch is dissolved; set aside.

Heat Vegetable oil over high heat . Add chicken, reserve any remaining marinade. Cook chicken about 3 minutes or until no longer pink.

Stir in broccoli and remaining 1/2cup broth. Cover and cook 1 minute. Stir in onions and cashews.

Stir reserved marinade into cornstarch mixture. Stir into chicken mixture. Cook 2 minutes or until sauce thickens.

Serve over rice.
