Greek Spice Cake



Greek Spice Cake

1Tbsp Shortening
2 Tbsp + 2 1/2 cups unbleached all purpose flour

1 cup sugar
1 cup packed brown sugar
1 cup canola oil
1 cup buttermilk
3 eggs
1 Tbsp vanilla
1 1/2 tsp almond extract
1 1/2 tap baking powder
1 tsp salt
1 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp baking soda
1 cup pecan chips
Confectioners' sugar

Grease 10-in. fluted tube pan with shortening; lightly coat with 2 tablespoons flour. Set aside.

In a large bowl, beat the sugars, oil, buttermilk, eggs and extracts until well blended. Combine the remaining flour, baking powder, salt, cinnamon, cloves and baking soda; gradually beat into the sugar mixture until blended. Stir in pecans.

Transfer to prepared pan. Bake at 325° for 50-60 minutes or until a toothpick inserted near the center comes out clean.

Cool for 10 minutes before removing from pans to wire rack to cool completely. Dust with confectioners' sugar.



Oh-My-Goodness!! This cake is going to be a Christmas tradition in our house!! The almond flavor really makes this cake! Yum Yum Yum!

Tuna Melt


This is what Brother and I had for lunch today, and I have to say it was an awesome rainy gloomy day lunch! Of course I found this on Pinterest! :-)

It is super easy to make, here is what you will need;

1 can tuna(in water), drained
1/4 cup shredded carrots
1/4 cup diced celery
1/4 cup minced red onion
1 tsp mayo
1 tsp red wine vinegar
Salt and Pepper to taste
2 slices cheese(I used Colby Jack)
2 slices Whole Wheat Bread
2 slices tomato
Oil Spray

Directions:

Combine tuna, celery, carrots, onion, mayonnaise, vinegar, salt and pepper.

Heat a large skillet over low heat. Spray skillet with oil, and place two slices of bread in the pan.
Top bread with cheese, then tuna salad and tomato. Cook on low heat until cheese melts and bread gets toasty.



Yum, Yum, Yum  will definitely be making this again!

French Bread Pizza

 


This is a great quick night meal idea! Add some tossed salad and you have a meal! :-)

French Bread
Pizza Sauce
Mozzarella Cheese
Pepperoni

Pizza toppings of your choice

First take the bread loaf and cut it in half in the middle, then cut in half long ways.


Add the sauce,toppings, and cheese and bake at 400 until cheese is brown and bubbly.
NOTE: if you like crunchy pizza toast the bread a little before you add the sauce, if you like chewy pizza don't :-)

Chili {Wendy's Style}



I love this time of year! The weather in East Tennessee has been perfect the last few days!
Last week when I was making my menu I specifically left Sunday blank because I wanted to see what the weather was really going to do...Warm=Grill...Cool=Chili! Yay for cool weather because I got to try out this recipe I had been wanting to try for a while! I love Wendy's chili and this recipe(I think) is just a smidge better!!  :-)

Ingredients:
4 pounds ground beef, browned and drained

2 large yellow (sweet) onions, chopped

5 large green bell peppers, chopped

4 celery stalks, chopped

2 heaping tablespoons minced garlic (I use jarred)

2 cans Ranch Style Beans, NOT drained (15 ounce cans)

2 cans dark red kidney beans, drained and rinsed (15 ounce cans)

2 cans Original Rotel Diced Tomatoes & Green Chili (10 ounce cans)

2 cans stewed tomatoes (15 ounce cans)

4 cans plain tomato sauce (15 ounce cans)

2 packages McCormick Mild Chili Seasoning (1.25 ounce packages)


Directions:
Combine all ingredients in a large stock pot(it filled my 10quart pot)

Simmer for at least three hours (I let mine cook all day long).

Mexican Pizzas


MEXICAN PIZZAS

3-4 Large tortillas - I used wheat because that's what I had but the other would be fine)
1 cup lean ground turkey,cooked
1/2 cup salsa
2tsp Taco Seasoning
1/2 cup refried beans
1/2 cup shredded cheese of your choice(cheddar,mexican,etc..)
Toppings: Lettuce,Onion,Tomato,Sour Cream, Olives,

Preheat oven to 425, Spray a 12 count muffin tin with cooking spray.

Lay the tortillas out flat and use a cup,cookie cutter,etc.. to cut 12 circles.

Press each circle in the muffin tins using your fingers,it's ok if the circle doesn't fill the whole cup.

In a small bowl mix the meat,salsa,beans, and taco seasoning.

Put 1/8 of a cup of mixture in each tortilla circle.

Top with Cheese

Bake for 12-18 minutes.

Serve with toppings of your choice.

Mexican Rice and Bean Casserole


1 tsp vegetable oil
1 onion, chopped
2 cloves garlic, crushed
1 14 oz can sliced mushrooms
1 large red pepper, chopped
1/2 cup water
3/4 cup converted rice
1 19 oz can red kidney beans, drained and rinsed
1 19 oz can diced tomatoes
2 tsp chili powder
2 tsp cumin
1/4 tsp salt
1/4 tsp ground pepper
1 cup shredded low-fat cheddar cheese
1/4 cup sliced green onion

In a large skillet heat oil over medium heat. Cook onion, garlic and red pepper until tender, about 5 minutes.

Add water, mushrooms, beans, tomatoes, chili powder, cumin, salt and pepper.

 Simmer covered until rice is tender and most of liquid is absorbed, about 25 minutes.

Transfer to a baking dish and sprinkle with cheese and green onions.

 Bake at 350F for 15 minutes until cheese melts.

Shrimp Stir Fry with Potatoes


2 Green Giant Steamer Garden Vegetable Medley bags
1 large Orange Bell Pepper
1 onion
2 cups Cooked Shrimp
2 Tbsp Hawaiian Marinade

Mix all together in a large bowl.

Cover grill with foil and spray with cooking spray.

Grill over medium heat for 15 minutes, stirring every 3 minutes.


This is a very easy and delicious meal! This was enough for 2 adults and 2 kids. I will definitely be adding this into our rotation of meals!!  :-)

Bentos/Snacks/Toddler Lunches


Sissy has a "power snack" mid-morning at school every day. This day she took:
Apples, Chex Mix and Trail Mix, and Water to drink.


Left-Over hot dogs in thermos, Fruitables juice box, Ketchup in blue box, Oreos, Pears, and Goldfish


Left-Over BBQ Chicken from dinner the night before, Applesauce,Pretzels,Carrots and Cucumbers. She took water to drink.


Trail Mix, Raisins,Swiss Cheeze-Its, and Applesauce. She took water to drink.


On this day she had Turkey and Swiss Sandwich, pretzels, Strawberries,Pineapple and Carrots. She took Water to drink.

This is what this bento looks like closed up and ready to go.


Snack: Cantaloupe,Raisins and Chex Mix. She took water to drink.

Toddler Lunches:

On this day Brother had: Tropical Fruit Mix,Cucumber,Tuna,Saltine Crackers,Carrots and Ranch to dip. He had half juice and half water in his sippy.


Today we had: Pretzels, Watermelon,HB Egg, Avocado, and Tomatoes. He ate about 3/4 of this plate. He had water to drink.

2nd Grade and First 2 Bentos


School is in full swing here. My girl is in 2nd Grade, she LOVES her new teacher and is so excited for the year... Time flies by so fast!





First snack:

Pretzels, Cheese, and Strawberries. She also had water to drink.

First Lunch:

As requested...
Turkey and Swiss Cheese sandwich with Cheez-it Crackers,Pineapple, Oreo Cookie, with water


First project/homework. She was very excited about this and did it (mostly) by herself.  She had to decorate the bag and put 5 things inside it that tell about her.  She put a Starfish because she loves the beach. A basketball medal because she loves basketball and can't wait for it to start back. A button pin that says "Proud to be a bookworm" because she loves to read. A photo album that had lots of pictures of family,friends, ticket stubs from places she has been,etc.. And a little toy spy gadget, because she wants to be a spy like our friend(who is a detective..lol).

Snack on Day 2:

Banana,Goldfish, and Trail Mix. She also had water to drink.

Lunch Day 2:

As requested...
Puzzle pieces Ham and Cheese Sandwich, Chex Mix, Carrots with Ranch, and Applesauce. And 3 tiny cookies. She also had water to drink.
