Easy Pot Roast


1 1/2 pound chuck roast
3-4 celery stalks
3 carrots
1 large onion
5-6 red potatoes
Lemon juice
Lemon Pepper seasoning
  1. Add lemon juice and Lemon Pepper seasoning to roast and allow to marinate 8-12 hours
  2. Put Roast in base of crock pot
  3. Chop all veggies ( large chunks) and add around roast

       4. Cook on low for 8 hours.

I served this with Brown Gravy and Cornbread. YUM-O We loved it and will continue to use this recipe!

Lunch 3-22



I let Sissy choose her lunch again on Tuesday. I think she did a fairly good job. We are on a fruit and veggie strike again at our house...from BOTH kids.  Arghhh...

Fruit Leather
HM Banana Bread
Applesauce w/cinnamon
She took water to drink

Mushrooms and Onions


This is one of those "to easy for a recipe" recipe. Haha!
I only make this when I make steak and it is a GREAT side!

Here is what you will need:

2 Tbsp Olive Oil
Garlic Powder
Small can Mushrooms (I like onions more than mushrooms, you can switch to have more mushrooms)
1 small onion( I sliver it)

  1. Add oil to skillet and turn on medium high heat.
  2. When oil is hot add onions. Allow onions to cook down some.
  3. Add mushrooms and Garlic Powder.
  4. Cook about 5 minutes or until onions are tender.

Big Daddy packed lunch today. Here is what she had:

Sun Drops
Carrots
Pretzel Thins (broken to fit)
Half a Ham and Cheese sandwich
She took a Capri Sun to drink

Menu Plan 3-21/3-27

I had a GREAT weekend! Went to a birthday party on Saturday at the park. Same as last week after all the pizza and cake we went for a walk around the park! Yay!
Then today Big Daddy took me and the kids to Cades Cove! One of my most favorite places!  :-)  We took a packed lunch for a picnic but, it was windy so we had a "car lunch". We came home to work in the yard and then grilled out!  It was a beautiful day in East TN!


Here is what we will be eating this week:

Monday:
Applesauce Bread
Bento
Pot Roast w/Potatoes, Carrots and Gravy

Tuesday:
Cereal
Bento
Cook Out: Kebabs w/Corn on Cob and Grilled Veggies

Wednesday:
Jelly Biscuit
Bento
Taco Night w/ Guacamole and Bean Dip

Thursday:
Fruit Salad w/Yogurt
Bento
Turkey Burgers(freezer) w/Salad and Avocado

Friday:
Cereal
Bento
Spaghetti w/Green beans and Toast

Saturday:
Eggs, Turkey Bacon, and Toast
Quesadillas w/Raw Veggies and Dip
Sloppy Joe's w/ Grilled Mixed Veggies and Corn

Sunday:
Pancake Sausage Muffins
Bean and Cheese Burritos w/ Peaches
Turkey, Stuffing,Mashed Potatoes, Green beans, Rolls, Cranberry Sauce w/ Turkey Gravy
