Chicken Nachos

I originally found this recipe on 5dollardinners  and Hubby and I love it! This dish would be great for the Super Bowl!



What you will need:


2 cups cooked chicken (I stretched this from a whole chicken I boiled the other day. Also, I always shred
the chicken.)

1 can corn, drained
1 can Rotel, don't drain
1 can black beans, drained and rinsed
1/4 cup red onion (trust me the red is better than yellow in this)

You also need the Tortilla chips - any kind
Mexican blend cheese

Add everything except chips and cheese to a large pan


Cook 5-6 minutes, stirring often. (Do not overcook, it turns a grayish color and doesn't taste as good)

You can do this 2 different ways, place your chips on a plate cover with cheese and microwave until cheese is melted. OR place in a bowl and melt cheese and use your chips to scoop.



Yum-o! Try this dish soon, you will love it! :)

Big Mikes + Lunch 2-3-11

We had a great dinner tonight at Big Mikes! I love seeing friends! Eleanor has been in my life as far back as I can remember and her husband Mike is a great guy!!! I love them both and all their kids!! I say kids, some of them are my age and I remember when Sky was born! :)
I had a reuban sandwich, which was so yummy! Hubby had a Philly sandwich, he liked it so much that he got an extra one for later. haha


And the banana pudding OMG! We got extra of that to go as well   :)



Anyone lives in the Sevier County area go check out Big Mikes its off Boyds Creek Rd past Seymour schools on right.

Now on to lunch from today...

Raisins
Turkey
I also put in a Horizon Strawberry milk.

She must have liked this one b/c her box was empty when she came home. :)

Lunch 2-2-11

This lunch was kinda thrown together at the last minute. But I think it still turned out alright.


From top left corner she has:
Carrots with ranch
Pineapple and blueberries
Ham and cheese sandwich(ignore the letters, I was experimenting) pirate booty and cookies.

I have seen this container used on many other blogs for different kinds of kids lunches. Unfortunately it did not work very well for Sissy. So I probably won't be doing many more packed like this, I would rather stick with bento boxes. On the other hand though they do work good for Hubbys lunch b/c he always just wants a sandwich and goodies...

Better than Restaurant Beef and Broccoli



This recipe is SOOO YUMMY!  I really believe it is better than at a restaurant!

What you will need:

1lb beef, cut into thin strips
4-5 cups cut broccoli

Marinade:

2Tbsp cornstarch
2Tbsp soy sauce
2tsp sugar
2tsp ginger
2 cloves garlic, minced

Gravy:

2 1/2 cups water
3Tbsp cornstarch
1/3 cup soy sauce

Begin by mixing your marinade


Cut the beef in very thin strips. (I also cut ours in half so they aren't so long)
Pour marinade in container with cut up beef



Let this stand 15-30 minutes
I make my rice and cut up broccoli and unload the dishwasher and pacify kids while this sits awhile.

Heat about a Tablespoon of oil in a large pan over medium high heat. Stir fry meat for 1 minute. Add broccoli and cook 4 more minutes.  Add gravy and slowly bring to a boil. (Make sure you stir all those "bits in pieces" off the bottom of the pan)


Mixture will thicken as you cook it for another 5 minutes on medium heat.


I serve this over brown rice with a fortune cookie!

Lunch 2-1-11


Sissy loved this lunch! Hubby said as soon as she got in van at school today she was talking about it!  :)

Tortilla rounds (she is learning the letter "B" this week in school)
Mozzarella cheese  and turkey pepperonis
Trail mix and blueberries with a tootsie roll treat

I sent some pizza sauce in a small container and a bottle of water with it as well.

Also, so I don't get asked...those are food SAFE markers people   :)

Lunch 1/31

Mondays lunch was very simple. Sissys favorite color is blue so she liked this one! :)


From left she had:  Pineapple, Bbq sauce, dinner roll, chicken, and cheese and a fruit strip w/bottle of water

Lipton Chicken(A-1 Chicken)

This recipe is really easy! In fact it's one of my "go to" recipes. 
Hubby likes to call it A1 Chicken because he smothers it in A1.

What you will need:

1lb boneless chicken(cut in bite size pieces)
1 envelope Lipton onion soup mix
1/4 cup olive oil
1/2 tsp garlic powder
3 potatoes (cut into bite size pieces)
10 baby carrots (chopped)

Preheat oven to 450 degrees

In a large bowl add all ingrediants , toss until everything is evenly coated.
Put all in greased casserole dish.


Bake uncovered 45 minutes, stirring half way through.
Bake until veggies are tender and chicken is no longer pink .



Very easy and tasty!  And don't forget to try it Hubbys way with a little A-1!  :)

This weeks menu

It was a beautiful sunny day in East Tennessee and we spent the better part of it outside!




The kids played on their swing set, drew with chalk, and just ran around the yard. Papaw came over with the metal detector and they dug around in the yard awhile. Sissy was very proud of the 69 cents she put in her piggy bank(and the bullet she threw in the trash). ha ha
 I also got 4 drawers in the kitchen cleaned and organized! YAY!  :)


This menu is fairly easy, not a lot going on this week.

Monday:
Cereal
Bento
BBQ Chicken w/ baked beans and HM french fries

Tuesday:
Oatmeal w/ peaches
Bento
Beef and Broccoli w/rice and fortune cookie

Wednesday:
Yogurt w/granola
Bento
Taco salad w/ corn on the cob

Thursday:
Cereal
Bento
Eating out at "Big Mikes"  (some friends of ours opened a restaurant and we haven't ate there yet)

Friday:
Banana rolled in peanut butter and granola
Sissy has Field Trip
Pinto beans w/ cornbread, sauerkraut and wienies

Saturday:
Breakfast Burritos
Grilled chicken salad
          ?

Sunday:
French toast w/ turkey bacon and eggs
L.O.s
Meatloaf w/ mashed potatoes and peas
