Pork and Potato Skillet


Here is what you will need:
  • 4 boneless pork loin chops
  • 3/4 tsp seasoned salt
  • 2 Tbsp Olive Oil
  • 1 small onion, chopped
  • 1 medium red pepper, cut in 3/4-inch pieces
  • 3 cups frozen diced hash browns
  • 2 cups frozen peas and carrots
  • 1 tsp dried thyme, crushed
  • Salt and Pepper
  1. Sprinkle both sides of pork chops evenly with 1/2 tsp of the season salt. In a very large skillet heat 1 Tbsp Oil on medium-high heat.  Cook chops in hot oil for 3 minutes. Turn chops. Cook for 3 minutes more until brown. Remove chops from skillet.
  2. Carefully add remaining 1 Tbsp oil to skillet. Add onion and pepper, cook and stir for 1 minute. Add potatoes, peas and carrots, thyme, and remaining season salt; mix well.  Cook for 6 minutes, stirring frequently.
  3. Place chops on top of potato mixture in skillet; cover. Reduce heat to medium. Cook for 7-9 minutes more. Add salt and course black pepper after plated.  

This would be good with chicken or even just the veggies as a side dish!

Crispy Chicken


Here is what you will need:

3 Tbsp Olive Oil
1 tsp Cumin (the cumin is good ,however, would have been fine with salt and pepper and maybe paprika)
1 large egg
1 cup panko bread crumbs (recipe calls for Italian but, I only had plain on hand)
4 chicken breasts
  1. Whisk egg and cumin in a medium bowl.
  2. Spread bread crumbs out on wax paper (I loved this idea...less dishes)
  3. Dip chicken into egg mixture, then coat in bread crumbs
  4. Heat oil in a large nonstick skillet over medium heat. Cook chicken 10 minutes turning every few minutes until crisp.
I made a salad of tomato, red onion and avocado drizzled with a little olive oil , lime juice, salt and pepper.

This chicken is so good and the corn and salad went well with it! Would be a GREAT Summer night dinner!

Chicken Hash


Here is what you will need


3 Tbsp Olive Oil
2 Tbsp Butter
6 potatoes, cut in small cubes
1 large onion, onion
1 green pepper, diced
3 carrots, shredded
2 cups cooked and shredded chicken
1 tsp Salt
1 tsp Pepper
1 tsp Paprika

  1. Heat Olive Oil and butter in a large skillet on medium heat.  Add potatoes and cook 5 minutes until they start to brown on one side.
  2. Add onion and green pepper. Continue cooking another 5 minutes.
  3. Stir in carrots, chicken and spices.

 Cook, stirring often, until potatoes are tender and browned all over. About 10 minutes.



Gravy, Ketchup and Cheese would all be good with this! Or an egg... yummy!

I originally got this recipe from Cooking During Stolen Moments  of course, I had to change a few things.
And although this is called Chicken Hash and I had every intention of making chicken, I grabbed an unlabeled bag out of the freezer that I THOUGHT was chicken...It was turkey! It was still very good so this will be a definite after Thanksgiving recipe!  :-)
I think that it would be a good brunch dish or lazy lunch.

Menu 3-7/3-13


I have lots going on this week, getting ready for Sissy's Birthday party. So, I wanted quick meals all week. These meals all fall under quick or Big Daddy can make  :-)
I'm trying to get some of the "cold weather" food out of the freezers, so I can start getting "grilling weather" food put in!
