Garlic Roasted Chicken

  • 4 chicken breasts
  • 2 heads garlic
  • Rosemary
  • Olive oil
  • Salt and Pepper
  1. Preheat oven to 425 degrees.
  2.  In oven proof skillet, heat 2 Tbsp oil on stove top.
  3. Salt and Pepper chicken then add to pan. Fry for 5 minutes browning both sides.
  4. Separate the heads of garlic, but do not peel. Add garlic and rosemary to the pan and transfer to the oven.  Roast until chicken is cooked through, about 20 minutes.

Very good! I LOVED the garlic! Y'all try this out, it's VERY easy and SO tasty!  :-)

  • Raisins & Sun Drops
  • Sun Chips
  • BBQ sauce in HK container
  • Blue milk to drink



This box says "I wish it is a good day today"


For a snack she had:
  • Applesauce
  • Oyster Crackers
  • Capri-Sun to drink


Sissy loves this box. It was one of her first Bento boxes! It is a great snack box!  :-)

Midnight Snack Sandwich

Anyone remember the movie "Spanglish"? Well, in the movie Adam Sandlers character is a chef. One night he comes home late and makes himself a sandwich "chef style". Well this is our version of that!

Midnight Snack Sandwich
(For 2 sandwiches)
  • 4 pieces Sourdough bread
  • Small tomato
  • Lettuce
  • Mayo
  • Bacon, thick sliced (baked in oven)
  • Monterrey Jack Cheese, sliced
  • 2 Eggs
  1. Toast the bread. Set 2 pieces on a plate, the other 2 pieces top with a slice of cheese and pop in oven to melt. (Once melted add to plate with other, so it's easy to pop on top of sandwich).
  2. Top the other bread with mayo, lettuce, bacon and tomato(with a little salt and pepper)
  3. Fry egg in small amount of butter, over-easy
  4. Add egg to top of sandwich, place other toast on top.
  5. Cut sandwich down the middle, breaking egg yolk on the way down.


 People, People People ...This sandwich is SO good!! Try it,you must!

  • Sunflower Seeds
  • She took ice water to drink
This was first time we used this box and Sissy loved it!  :)

Lunch 3-2


Today's lunch was nothing special...Sissy "accidentally/on purpose" poked a kid with one of her picks yesterday so we are taking a break on those.
Today she had:

Fruit leather
Puzzle ham and cheese sandwich
HM Granola
Pirate Booty(under granola)
She took water to drink



This box was a little deeper than the other ones so that is why I have the stuff stacked in there.

Lunch 3-1


Today we tryed something new in Sissy's lunch box...anyone guess what it is?

She had:
Garlic Naan
Baked Teriyaki Tofu
Grapes
Cheese Stick
She also took a small HK Juice box

Well, did you guess the tofu?
She said she liked it at home but, when she brought her box home today she had only ate 3 pieces. We may wait awhile and try again...

Crabby Patties


I love Salmon patties! My mom use to make them when I was a kid so I knew I wanted to make them for the kids. But how to get Sissy to eat them with the word salmon in it? Well...Big Daddy lets her watch Sponge Bob sometimes so these aren't salmon patties, at our house they are Crabby Patties! :-)

Here is what you will need:


1 can salmon
1 egg
1/2 cup bread crumbs
1 tsp lemon juice

In a bowl, mix together salmon, egg, bread crumbs, and lemon juice. (I pick ALL the bones out that I can)


Heat a small amount of oil in a skillet.  Form your patties and place in oil. Cook patties for 5 minutes, turning once until golden brown.




This particular night we had raw carrots and Broccoli Cheese rice.

Sissy wanted to make the rice.

I orginally got this recipe from Laura at Heavenly Homemakers  I love her website. Everyone go check it out she has some great recipes! Everything we have tryed we all liked.  :-)

Lunch 2-28


I let Sissy decide what she wanted in her box today and this is what she chose:

Thin mint Girl Scout cookie
Grapes (w/a sword pick she threw in at last minute)
Panera Asiago cheese bread
Hebrew National Hot Dog w/ ketchup in HK container
She took water to drink

Menu 2-28/3-6


So I totally missed this yesterday...Sorry People. I had a GREAT DAY out shopping with Big Daddy....THEN we ate at a seafood place....I think they poisoned me!! Ugh.. I went to bed when we got home at 4. Got back up awhile, then I got a migraine like no other so I went back to bed at 8 when the kids went down. I slept until 7:30 this morning, Now I feel GREAT! Brother and I are playing while Sissy is at school. All of East TN is under tornado watch...lets hope it just passes on by....

I am still trying to encourage everyone to make a menu every week! You don't have to do a full menu like I do. In fact I started out doing 3 dinners a week then I just gradually increased it. A little planning on your part will save you more time/energy later in the week and it will save you money!!  :)

So here is what we are having this week:

Monday:
Cereal
Bento
BBQ Chicken w/ Twice Baked potatoes and Corn on cob

Tuesday:
Toast w/ PB and Banana
Bento
Baked Spaghetti (Big Daddy didn't get any last time) hehe

Wednesday:
Yogurt w/ HM Granola
Bento
Midnight Snack Sandwich w/ Sun Chips

Thursday:
Oatmeal w/ peaches
Bento
Garlic Roasted Chicken w/ Rice Pilaf

Friday:
Breakfast Burritos w/ Grapes
Bento
Shepard's Pie

Saturday:
Tomato, Avocado, and Bacon
Chicken Hash
Mari's Meatloaf and Green beans 

Sunday:
Turkey Bacon, Eggs, and Home fries
BBQ Chicken Salad
? (May have picnic if its pretty!)
