Southwestern Chicken and Rice


Here is what you will need:

1 Tbsp Canola Oil
1lb boneless skinless chicken breast, cut into bite size pieces
2 cups frozen corn , thawed
1 can black beans, drained and rinsed
1 1/2 cups instant brown rice
1 1/2 cups salsa
1 tsp chili powder
1 tsp ground cumin
1 cup shredded cheddar
  1. Heat the oil in a large saucepan over medium heat. Add the chicken and cook, stirring frequently, until lightly browned.
  2. Stir in the corn, 2 cups of water, beans, rice, salsa, chili powder, and cumin and bring to a boil. Reduce the heat and simmer, covered, until the rice is tender, about 15 minutes. Stir in the cheese until melted.
  3. Serve with dollop of sour cream and avocado.

Italian Turkey Meatballs


Here is what you will need:

2 cloves garlic
Large handful fresh flat leaf parsley, chopped
1/2 medium onion,chopped (I grated one to see if I could hide it from Sissy)
1 1/2lbs ground turkey
1/2 cup grated Parmesan
1/2 cup dried bread crumbs
2 tsp kosher salt
1 large egg, beaten
2 Tbsp milk
2 dashes Worcestershire sauce (about 1/2 tsp)
Course black pepper
1/4 cup EVOO
  1. Mix the turkey, onion, parsley, garlic, Parmesan, bread crumbs, salt, egg, milk, Worcestershire, and black pepper in a large bowl. Mix until just combined; don't over mix.
  2. Using your hands, gently form mixture into balls. Put them on a plate and cover and refrigerate at least an hour up to 24 hours.
  3. Turn oven on broil. Spray baking sheet, and place balls on sheet.
  4. Broil for 10 minutes or until they start to brown and crisp.


You can eat these with a little ketchup or throw them in some basic spaghetti sauce. YUM-O!
They would also be great turkey burgers!

Today Sissy had:
Strawberries(she doesn't like these very much,she can't understand why the seeds are on outside. But I like to keep offering them anyway!)

I also sent some fruit leather

Banana Bread


I LOVE this Banana Bread recipe! This is the only one I use, and it ALWAYS comes out great!
Everyone that trys it wants the recipe! It's very moist and yummy!  :-)

Here is what you will need:

1 cup sugar
1/3 cup butter, softened
2 eggs
1 1/2 cups mashed ripe bananas (4)
1/3 cup water
1 2/3 cups all purpose flour
1tsp baking soda
1/2tsp salt
1/4tsp baking powder
1/2 cup chopped walnuts

  1. Preheat oven to 350 degrees. Grease bottom only of bread pan.
  2. Mix sugar and butter. Beat in eggs until blended. (I use Mixer)
  3. Add bananas and water; beat 30 seconds. Stir in remaining ingredients except nuts, just until moistened. Stir in nuts last. Then pour into bread pan.
  4. Bake 1hr and 15 minutes or until toothpick inserted in middle comes out clean.
  5. Let sit in pan for 10 minutes. Then run a butter knife around edges to loosen loaf from pan. Let cool on wire rack on counter.


Alright Y'all here is my secret:
FROZEN BANANAS! That's right FROZEN! Whenever my bananas start turning I throw them in the freezer for bread. Big Daddy throws out the curse words when they start falling out of the freezer onto his toes though! HAHAHA   :-)

Menu 3-14/3-20

Today was Sissy's 6th Birthday Party, we had a blast with friends and family! It was a B-e-a-U-TIFUL day in East TN so after the party Big Daddy and I went on a 5 mile walk...just the two of us!  :-) 
This week is slowing down but we still have a few things going on. I carried some things over that we didn't get to last week.

Here is what we are having this week:

Omelet w/Toast

Reuben w/Chips and pickle

Sunday:
Breakfast Casserole
L.O.s or Picnic
Steak, Baked Potato, Baked Beans and Mushrooms w/onions
